Description

Upon initial entry, it is slightly robust, revealing a clear aroma with hints of tropical fruit, and the mouthfeel is transparent and smooth. Compared to traditional Aramasa offerings, the presence of barrel notes is less pronounced. Overall, the acidity is also milder, resulting in a uniquely balanced flavor, with a finish that is lighter than the typical Aramasa style.

This sake, known as "Earth," is made from 100% organically grown ingredients and is the most representative of agricultural craftsmanship within the "Colors" series.

The rice used, "Rikuyu 132," originated in the Taisho era in Akita Prefecture and is a variety developed from the Meiji period's "Three Major Varieties of Japan," specifically from "Kame no O" and "Aikoku," and is thus affectionately dubbed "Aikame." This rice is renowned for its resistance to cold damage and is widely recognized for its suitability for organic farming. This has been historically validated, as the brewery's own fields primarily cultivate this variety, embodying the strong "Earth" spirit. It is noteworthy that "Rikuyu 132" gained fame due to the advocacy of the poet and hardworking farmer Kenji Miyazawa. Today, this rice may have become one of the brewery's iconic sake rice varieties, on par with "Improved Shinkankyo." As a very hard-textured rice, "Rikuyu 132" requires prolonged cold storage to gradually reach its optimal flavor completion.
