This sake is produced and brewed in a large wooden barrel, which naturally imparts a woody aroma that blends well with the taste of sake. The taste is clear without impurities and has a wonderful sweet and sour balance. Although adding carbon dioxide added a slight bitterness, it is a perfect drink when paired with snacks, adding cheese or sour cream to enhance the sourness or adding salted mixed nuts for just the right flavor.

Commonly known as "Autumn Cherry Blossoms."

"Kaifuku Shinko" was the first sake rice born in Akita Prefecture in 1959. It is a descendant of the "Shinko 190th" variety, which is related to "Miyama Nishiki" in terms of "pedigree." However, the taste is completely different; "Miyama Nishiki" gives an impression of a hard texture, while "Kaifuku Shinko" is silky and smooth.

The "Jikagumi" method is to bottle the freshly squeezed sake on-site, taking as much time and effort as possible to avoid exposing the sake to the air. The purpose of this method is to preserve the original aroma and taste of sake by minimizing its exposure to the air, thus avoiding oxidation and other negative impacts. This method is usually carried out at the sake production site to ensure the freshness and quality of the sake.
