This sake has a refreshing aroma of green grapes, with no bitterness or astringency on the palate. The sweet and sour taste brings out the wonderful taste of juicy fruit. When tasted carefully, it has a unique refreshing feeling without being too stimulating.

Commonly known as "sumi" or "ink", this sake uses the "Kame no O" rice variety, which is famous for being selected as a mother variety for several rice and sake varieties during the Meiji era in the Yamagata Shonai area. When the No.6 yeast was born, the New Sake Brewery frequently used this rice. Through various techniques, the potential of "Kame no O" is maximized, making it one of the hardest sake rice varieties in existence. It has an extremely long fermentation time, and the longer it is refrigerated, the deeper the flavor becomes.
