This Amagaeru is a sparkling sake brewed through a low-alcohol secondary fermentation process inside the bottle. The clear type released this time is a version that has removed residual yeast and sediments, focusing on two styles: sweet and dry.

**Amagaeru** was born in 2012 and is Shinsei's only low-alcohol sparkling sake. Typically, low-alcohol sake refers to sake with an alcohol content below 10%, and "Amagaeru" maintains an alcohol content ranging from 8% to 9%. Friends who attended this preview event may already be familiar with "Amagaeru." Due to its low alcohol content, the yeast activity is strong. Improper temperature management during distribution can lead to excessive secondary fermentation in the bottle, making it difficult to open. Moreover, sometimes when newly opened, two-thirds of the liquid may spray out, or unfortunate incidents like explosions can occur if left in the car after purchase. Each time these incidents occur, we collect and apologize, but ultimately we had to take fundamental measures. After several years of effort, "Amagaeru Clear" was finally born.

In the 2021 production season, after four prototype tests, we successfully completely removed residual yeast and sediments to develop this safe "Amagaeru" (prototype four was unveiled two years ago at the "PRIVATE LAB EXTREME" preview event). "Amagaeru Clear 2022" is the second-generation attempt in the "Clear" series. Despite its appearance of calm, it contains strong carbonation and is very suitable for long-term storage.
