Description


"Seiran" has a low alcohol content, but it has a full-bodied and very light taste, with prominent fruity flavors, providing a rich drinking experience. Although this method is still evolving, we have achieved some success.

The two products released this month are significant in the history of the brewery, but due to the transitional production methods, unfortunately, they did not achieve the expected results. Typically, sake with an alcohol content below 10% is referred to as "low-alcohol sake," but for Japanese sake, which tends to achieve high alcohol content easily, this is a very challenging area.

"Seiran," launched in 2010, initially did not succeed. While the freshly pressed sake showed promising results, a phenomenon known as "immature aroma" appeared during distribution after its release. This aroma, similar to whey from yogurt, mainly resulted from pressing the sake at a stage when the yeast fermentation was still active. Although the aroma was not very strong, it was undoubtedly a failure for our brewery, which has always strived to avoid such aromas.

In the next season, to address this immature aroma issue, we introduced the product "Amagaeru." Through secondary fermentation in the bottle, immature components were further digested by yeast, achieving complete fermentation. This strategy paid off, and "Amagaeru" became an excellent low-alcohol secondary fermentation sake, quickly becoming one of the brewery's popular products.
