This sake showcases the unique aroma of Kumamoto No. 9 yeast, coupled with the natural sweetness of the sake and the thick texture that comes from the local brewing water. The interplay of fungi and microorganisms produces an unprecedented freshness that explodes in the mouth. The use of wooden barrels during brewing imparts a gentle and subtle cedar aroma and a complex, deep flavor.

The natural blessings of the Chikugo River Basin, the power of fungi and microorganisms in nature, and traditional wooden barrel brewing have given birth to the rich and traditional Japanese sake "Ubusuna Yamada Nishiki Kiokejouzou 2022." Ubusuna is made using the same additive-free lactic acid fermentation technique used in the Edo period, emphasizing the power of fungi and microorganisms and the gift of nature.

Furthermore, even after washing, small pores and gaps on the surface of the wooden barrel remain inhabited by microorganisms that continue to live on. We believe that the use of wooden barrels during brewing creates diversity and specific taste profiles in Ubusuna. We see ourselves as guides, using the power of microorganisms to guide the creation of sake.
