Description


This special junmai sake is brewed using a natural yeast starter called "nama-zukuri" using a unique method developed by Shizenjo Syuzo. It has a refreshing sweetness and rich flavor, with balanced acidity produced by lactobacillus. The unique characteristic of this sake is the harmonious coordination of sweetness, umami, and acidity, which creates a distinctive flavor.

The origin of "Shizengo" dates back to the fourth generation of Oki Daikichi, who pursued the traditional method of brewing sake using only rice. The brewery signed contracts with local farmers to use pesticide-free rice, which was rare at the time, for brewing. In 1974, to express gratitude for the abundant nature of Yabuki, they launched a product called "No Additive Sake - Shizengo."
