After pressing, the sake was quickly bottled and stored. The sake has a fresh taste with bubbles, refreshing acidity, and abundant deliciousness. The brewing skill of Toji Yumi Ono has evolved to a new level, so please enjoy to the fullest.

The first batch of sake for the Reiwa 5th year of Shiraso is brewed using rice produced in Ishikawa Prefecture, specifically the Gohyakumangoku variety.

The term "Shiraso" represents the universe and sky around us. It is derived from a word in Shibata Town and named as a new brand. Based in the birthplace of southern toji, we challenge rice brewing centered around the "acid base lees" principle, pouring a lot of effort into insisting on ancient yet innovative brewing methods. The charm of this sake is like floating lightly in the sky, inducing a tranquil and leisurely mood. Shiraso, as a new brand, is born, integrating the solid foundation of local sake brewing, while also ready to challenge new brewing techniques adapted to the times with the strength and talent of the toji and brewing personnel.
