After pressing, it is quickly bottled and stored, giving it a light effervescence, with a fresh acidity and abundant umami. The evolution of the sake showcases the deep expertise of the toji, Hiromi Ono, in the art of brewing.

This sake uses Gohyakumangoku rice from Ishikawa Prefecture, bringing a vivid sensation of the new sake.

The name "Shiraso" comes from Shiwa Town, embodying the vast universe and sky, symbolizing the expansive world that brewing strives for. As a brewery originating from the Nanbu toji (brewer) tradition, Shiraso continuously innovates, utilizing the "Suanbashi Moto" technique (brewing by maximizing the flavor of the rice), combining traditional methods with modern techniques to create this captivating sake. When sipping, it feels as if one has entered a serene and ethereal state, leaving one refreshed and at ease.
