This sake is brewed at Aramasa Shuzo using ancient kimoto yeast and Yoshino cedar barrels for fermentation, followed by aging in American oak barrels. The entire NEXT5 team participates in the traditional yeast stirring process using Yoshino cedar half-cut barrels, and the sake undergoes fermentation in barrels previously used for YAMAYU before being stored in American oak barrels. The combination of ancient kimoto yeast and cedar barrel brewing imparts a Japanese flavor, while the influence of American oak barrel aging, primarily employed by Ritchie in the United States, introduces a fusion of Eastern and Western wood flavors. It is recommended to store the sake refrigerated and serve it at room temperature.

This sake is crafted in 130-year-old Yoshino cedar barrels, followed by aging and maturation in new oak barrels (American oak barrels). It follows the traditional Edo-era method of "kimoto-zukuri."

Utilizing the No. 6 yeast from Shinshu Sake Brewery and Miyama Nishiki rice from Akita Prefecture, it forms a powerful combination. The black packaging box includes not only the sake but also a "brewing process logbook." Additionally, there is a booklet providing insights into the concept behind this sake.
