This sake has a truly unique aroma, with hints of sweet grape skin mixed with alcohol, and a touch of woody fragrance. On the palate, it reveals a clear sweetness with subtle and perfectly balanced astringency that doesn't feel overly bitter. In the aftertaste, a faint astringent note appears first, followed by a pleasant sweetness, creating a harmonious interplay between the two.

Throughout history, sake has been seen as a gift from nature, a means of communication with the gods. In those ancient times, sake was considered a symbol of prayer, free from industrial thoughts. People enjoyed "Nigori sake," a type of unfiltered sake.

As time passed, we arrived in the mid-Muromachi period in Japan (around the 1400s AD). Monks at the Shoryaku-ji Temple in Nara prefecture used their experience and wisdom to minimize the risk of decay by relying solely on natural elements, creating the brewing method called "Bodai Shuzo." This was a form of supernatural brewing. It became the prototype of modern brewing methods, and from there, Nara's monks continued to develop various techniques such as "Sandan Kobo," "Kakudai-zukuri," "Hiire," and "Josoguchi," changing the history of Japanese sake.

The charm of brewing sake from the pure elements of nature captivated people, becoming an indispensable presence in their lives. In today's world, where everything and every aspect strives for efficiency and industrialization, the era seems chaotic and disordered.
