In Japanese sake brewing, balancing saccharification (the process of dissolving rice starch into sugar) and fermentation (the process of producing alcohol) is a well-known important factor. For over 20 years, Abura Nagashi Brewery has been brewing a series of sake with a 80% rice-polishing ratio. The characteristic of this sake is that the selected rice is rich in minerals and energy, and the brewery's own groundwater from the Katsuragi Mountain range is also extremely hard, resulting in a sake that is rich in minerals. This requires effort to balance these elements. However, if balance can be achieved successfully, complexities such as sweetness and umami taste, acidity, astringency, and subtle bitterness merge, expressing the energy of the earth and creating a charming Japanese sake.

"Kaze no Mori" is brewed in the town of Gosho, Nara Prefecture. This brand was born in 1998 and will celebrate its 25th anniversary in 2023. To celebrate the 25th anniversary of Kaze no Mori, a commemorative sake called "Future Forecast Sake" was specially brewed. This is an introduction to the second installment of this series.

The concept of "Future Forecast Sake" is based on the image of Kaze no Mori 25 years later. The theme of the second installment is "the world of high-temperature fermentation."

Usually, Kaze no Mori is brewed using a long, low-temperature fermentation method. However, this sake replicates the technique of high-temperature environment (brewing in summer) that is no longer used in modern times, as recorded in a diary called "Gosaku no Nikki" compiled in 1355. The koji is fermented at a high temperature to create the sake.

This high-temperature fermentation technique is also used in the retro-style Japanese sake "Mizuhata 1355" produced by Abura Nagashi Brewery. Through the knowledge gained from this experience, "Future Forecast Sake II" successfully expresses the unique charm of high-temperature fermentation that has been lost in modern brewing.

High-temperature fermentation is very different from modern brewing processes. Even with rice polishing ratios of up to 90%, the rice will be liquefied in about three days under these conditions. The sake brewed by high-temperature fermentation has a complex charm that can only be obtained under such conditions. A unique and unprecedented sake full of personality was born.
