A superb pairing of Juyondai Junmai Ginjo Nakadori Akaiwa Omachi, characterized by its elegant and abundantly fruity aroma of peaches and white grapes. Upon entry, a subtle effervescence stimulates the palate, intertwining the sweet and sour notes of pears with a light and delightful bitterness. From the third or fourth day after opening, it gradually transforms into a rich sweetness and delectable flavor, enticing you to indulge in one glass after another, until the entire bottle is consumed.

In the process of sake extraction, it is divided into three stages: "Arawari" (first press), "Nakadori" (middle press), and "Oshikiri" (last press). Firstly, bags containing moromi are gradually stacked and compressed from the top to extract the moromi. The initial liquid that comes out of the bags is called "Arawari," which has a lower alcohol content and presents a clear appearance. In the "Tsuki" stage (referring to the stage where the liquid flows out of the bags), the liquid is called "Nakadori," and the final extraction is referred to as "Oshikiri." In essence, "Nakadori" refers to the refined liquid obtained by removing the initial and final parts during the moromi extraction process.

Hailing from the birthplace of sake rice, the Akaiwa Omachi rice undergoes an extended period of low-temperature fermentation, resulting in a sake with a rich mouthfeel and aromatic profile. Throughout the brewing process, the art of "nakadori" involves carefully collecting the best-balanced drips during the pressing, showcasing the potency and character of the rice, allowing one to fully relish its charm.
