This sake showcases a dazzling and elegantly transparent appearance, exuding an intoxicating aroma of ripe pear and flower pear. After resting for a while, a hint of incense-like fragrant undertone emerges in the aroma. Behind it, one can sense the fresh air and water of Nagano. With a slight effervescence upon entry, it gradually unfolds into a rich and sweet flavor. The smooth acidity and the strong minerality from the water of Okaya, along with the umami from the combination of Yamada Nishiki, Takane Nishiki, and Kinmon Nishiki rice, permeate the mouth and body, creating a deeply enchanting experience.

For dishes based on dashi: such as kelp dashi, clam or oyster hot pot, or sake-steamed dishes, especially with shellfish, which perfectly integrate the freshness and minerality of the sake. Traditional Edomae sushi: paired with delicate artisan sushi, showcasing an excellent match. The essence of the mountains: such as tempura of mountain vegetables or seasonal greens, and salt-grilled river fish, enhance the mineral flavors within the sake, leading to a deeper taste experience. This sake complements exquisite dishes while also expressing the beauty of nature, making it a delightful brew that lingers in the memory.

This is a limited edition junmai daiginjo sake crafted from a carefully selected unique formula of rice by Toshimaya, using Kinmon Nishiki, Yamada Nishiki, and Takane Nishiki rice from Nagano Prefecture, which are closely related varieties. By retaining a slight effervescence and applying heat treatment, followed by aging in a refrigerated environment for about six months, this masterfully crafted junmai daiginjo is brought to fruition.
