Description

This sake has a gentle and light maturity, as well as a soft aroma similar to peaches. The taste is very smooth, with a subtle sweetness followed by a rich and full-bodied texture, then a slightly salty acidity, creating a refreshing overall mouthfeel.

At room temperature, the aroma gradually reveals itself, and the acidity gradually increases in sunlight. When the temperature reaches body temperature, the aroma stabilizes gradually, and the acidity begins to appear, and at a slightly warm temperature, it exudes a sweet aroma. When served hot, the alcoholic aroma gradually appears, and at high temperatures, a slightly spicy taste can be felt, but surprisingly, it still maintains a good overall balance.

This sake is quite interesting because you can experience different flavors at different temperatures, making it suitable for trying out different food pairings as well.

It is usually called "Seisei". This is a basic sake made from Akita's sake rice "Sakamai," which uses the "Flat Milling" technique, similar to Lapis. The unique pure taste of "Sakamai" is reminiscent of water after melting snow in cold regions. As an entry-level product, it is hoped that more people can enjoy this refreshing sake.

The special feature of this sake is that it is an aging version stored within the brewery.
