This sake exudes a refreshing aroma of green grapes. It has a sweet and slightly acidic taste that brings a sense of tasting juicy fruits. Upon savoring, it retains the unique and non-irritating crispness typical of sake.

Commonly known as "Sumi," this sake uses "Kamenoo," a rice variety famous for being the parent of many other rice and sake varieties, selected from the Yamagata region during the Meiji period. When yeast No. 6 was born, Shinsei Shuzo's brewery frequently used this rice. They used various techniques to increase the original yeast's population, maximizing the potential of Kamenoo. As one of the hardest sake rice varieties still in existence, it undergoes an extremely long fermentation process, and its flavor deepens with extended cold storage.
