"ALPHA2 Ikakitori" is a refined sake produced by Kaze no Mori brewery in Gosho, Nara, belonging to their innovative series "ALPHA". This special sake employs a new squeezing technique called "Ikakitori". This technique, developed independently by the brewery, was inspired by documents from the Muromachi to Edo periods. By utilizing this method, the sake can be squeezed under ideal conditions without pressure or contact with oxygen.

Due to the complex process, production quantity is limited, but once tasted, you will be surprised by the difference in taste from traditional squeezing methods.
