"ALPHA" is Kaze no Mori's new sake series. By introducing innovative elements, this series takes traditional methods to a new level. ALPHA is loved by people at all levels, from sake beginners to experienced tasters.

Starting in 2022, the ALPHA series adopted the "Botan rice method" to achieve a comprehensive upgrade. Botan rice is a sake brewing technique developed in Bodai-ji Temple during the Muromachi period and is considered one of Japan's oldest Sake mothers.

For the new ALPHA1, the brewery has established a dedicated "Botan rice chamber" to achieve one of Botan rice's characteristics: the pre-production of water through lactic acid fermentation and its use in brewing mothers. Lactic acid fermentation is bold and subtle, and to skillfully handle this process, the Botan rice chamber was established.
